A Note from The Author

During the year 2001, I both became a proud new father and found out I had thyroid cancer. Suddenly, profound became the concept of nutrition. As I struggled to bring my illness under control, I also reveled in the perfect new life that God had trusted me with and began creating simple healthy recipes that my child would enjoy.

Not long after that I became a single dad and had to make my recipes super quick to make. Like a mad scientist armed with a cutting board and something vegan I began to serve up my experiments to my daughter and her friends to taste. I would start each day by pulling stuff out of the fridge and within 15 minutes the entire countertop and some of the floor was a complete mess. I didn’t do it to write a book. I did it to see the eyes on my daughter when she made her way into the kitchen and said ”What is that?” Then I would show it to her and most of the time she would giggle and devour it. I would work for 15 minutes and get paid with a giggle! Totally worth it.

I didn’t start to document the recipes until some of my friends and family told me I should put together a little cookbook. Then I started to make notes and take pictures as I made my mess each day. If I was lucky I might end up with 1 recipe and a couple photographs for my efforts. It was truly fun though! Poor nutrition in children is an epidemic in our country and like "Chicken Soup for the Soul" or "Thyroid Cancer for Dummies"; people need basic solutions that they can fit into their hectic lives.

This book is for the single, working Mom’s and Dad’s who have exactly 7 minutes to prepare a breakfast
(and lunch-to-go) for their kid before getting them off to school. This book is for the growing number of single parents who do not have time to become nutritionists, but demand good nutrition for their child.

What today’s parents need are simple solutions, like a breakfast cookie made with oatmeal and an egg, (that takes only 35 seconds to cook in a microwave,) and can be eaten on the way to school. What makes this cookbook different from others in recent history is that the recipes are truly simple to make and fun to eat.
